It's made from high quality Ecuadorian cacao, processed at very low temperatures in order to retain all the nutritional qualities of raw chocolate. This raw chocolate is naturally rich in anti-oxidants. To make the bars sweeter, Ombar use coconut blossom sugar. This sugar is not like normal sugar. It is made from coconut palm sap. When stirred over heat, the sap begins to crystallise. This sugar is used in this unrefined form and is very low on the Glycemic Index (35GI).
