Q: can you only have one animal built at a time?

Correct, only one animal can be built at a time.

Q: Our remote doesn't seem to be communicating with the machine. And yes, batteries in correctly and on same channel.

Please ensure all new disposable batteries (1.5v) are being used as opposed to mix (used and new) or rechargeable batteries (1.2v) and that the disposable batteries are inserted into the correct orientation. Also ensure, both the remote and receiver are set to the same channel (4 channels available on each). These are IR frequency so a direct line of sight is needed between the remote and received, please ensure the remote's IR transmitter is pointed directly at the receiver. Q: Since we can only build one animal at a time, how easy/hard it is to desemble a built animal in order to build another one?

Most of the pieces are held together via friction so it is easy to disassemble. The only exception are the small clip bushings that connect the to the gears. These have small plastic clips that hold them tight to the gears. If you are not careful you can break these pieces. I damaged one of them during my use and had to repair it with some crazy glue. I noted this in my review. If you break them, it basically ruins the set.
