Handled with a hammer grip, it is used to remove the head of the fish with a clean cut, while its sharp side allows it to slide on the bones. It can also be used to cut crustaceans' carapaces. Nowadays it is a widespread multipurpose knife, forged with a single piece of steel. The blade tang is inserted in the handle while still incandescent, to ensure extraordinary resistance over time.
