Excellent for large batch cooking
I bought this as a replacement for a worn-out ceramic 'chicken fryer' that I had used for years, and it is every bit as good as I hoped it would be.The bowl is deep... I mostly use it for making large batches of stir fry. Plenty of room to add all the ingredients and stir without pushing it out of the pan.The heat ring covers the entire bottom of the pan and distributes the heat well... it sits comfortably on the large ring of my ordinary glass top stove which means no cold spots.The lifting handle on the bowl itself is essential... if you've ever had to lift a big pan like this full of food, you know how unsteady using just the handle can be.The glass lid is heavy and sits inside the pan. The silicone handle protector is a great touch... I recently purchased a set of copper cookware with glass lids that do not have any protection on the handle and let me tell you, those handles get HOT.Clean up is simple... let the pan cool, rinse, and then use dish detergent and wash by hand. I've never had anything stick to it, not even pan searing pork chops and steaks to get that delicious outer crust. I can't attest to putting it in a dishwasher, I've never owned one.One thing I have learned from using ceramic and nonstick cookware for more years than I can count... use moderate heat. Turning the heat to high will not only scorch the coating, it will cause the pots to warp. And don't ever run them under water right after cooking, that's guaranteed to cause a warped bottom... let them cool down naturally first.All in all, I love this big, beautiful pan, and at this price if I use it for 5 years before needing to replace it I will consider it a terrific investment.
