I work in a large commercial government kitchen, high production, I generally use cleavers, santokus, filet knives, mostly Forschner's, F. Dick's, NSF's, etc., and was looking for a beater as a backup. I saw this Kiritsuke listed, saw the blade design, read the reviews and decided to pull the trigger and give it a try. Box arrived, nice little case, like the grip, the heft is very good, like the balance, and felt comfortable in my hand. Took it to work, gave it a few swipes on my finishing stone, and was very pleased by the edge. Spent a 9-hour shift processing starches, vegetables, proteins, both fish and beef, used it throughout the shift, and was very surprised how well it did. I agree with some of the other customers, the tapered cleaver design takes a little getting used to, but once you get used to the blade design, it falls to hand well. Other customer comments I also agree with are it is a little heavier than other blades, but not too badly, the handle is very comfortable, and I do like the little bit of flex the slightly thinner blade gives, even with the good back on it. Will update in a few weeks, but overall, first out of the box impression was very, very good, surprisingly. A few coworkers gave it a try, let them play with it for a few minutes on chicken, potatoes, and they were surprised and gave thumbs ups as well.Bill

Great sharp knife. Beautiful blade. Only thing I would improve is the sheath. The knife fits in there a little too tight out of the box. But I’m hoping that changes with use.

I have been cutting for years and need to sharpen at least once a day been craving hearts beef for 3 weeks and livers and I haven't needed to sharpen yet.

This set was amazing, the knife is sharper than most $200 knifes - it sliced through a tomato like magic. The boxing is beautiful and comes with a finger guard and a metal bar that looks like soap to get garlic or whatever smell off your hands.

The knife itself is solidly built with a sharp blade and comfortable handle. However, the sheath provided was disappointingly undersized, rendering the knife unsafe for carrying or storage. A replacement sheath would greatly improve its usability.
