Remind me of Lucca in Tuscany

I have ordered several di8fferent brands of pasta and for each they are excellent- They are however priceyThey are in cost two to three time for cost than the supermarket brands. But compared to the Italian pasta the taste like glue. So I will take the Italian brands every time

Worth Every Penny!
Tough to give a complete and thorough review of the product/service - I mean basically, I ordered some pasta, it was exactly what I wanted, it arrived quickly, and it was in good condition. Perfect. What else can I say? Well, now that I think about it, I can say what I did with it. Here is a picture of the final “product” … AND IT WAS DELICIOUS! I was trying to duplicate a dish that I had in Florence – basically a pasta with mushrooms and prosciutto – so I used your Pici di Toscana, which as you know is a hand-rolled pasta that originates in the province of Siena in Tuscany. For the mushrooms, I used a combination of Crimini, Portobello, Shiitake and Oyster and sautéed them with thyme, butter and olive oil and then added shallots and prosciutto. I then experimented with different types of flavor profiles (including veal demi-glace, heavy cream and of course more butter – all too heavy.) I think I made six different options before I decided that a light sauce was what I were looking for and used chicken stock seasoned with thyme, marjoram and oregano and some pasta water instead of something heavy. I topped it with crumbled fried prosciutto, a drizzle of black truffle oil, and if you look closely, you will see a sprinkling of fresh thyme blossoms. P.S. Thank you for a great product!

Great but must be cooked thoroughly
Bigoli is classic Veneto pasta. It is particularly designed to hold greasy meat sauces. Because this pasta is dried for shipping and extra thick, you MUST cook it at least 25 minutes and then judging it's doneness by taste. When you get it, cook a test batch and pull a noodle at 25, 27, 30, 32 minutes to understand this pasta. When it is just short of al dente, pull it from the boiling water and add it to your already heated meat sauce. Cook the bigoli in the meat sauce until it has absorbed some and is well flavored and thoroughly cooked with just a little bit of tooth (al dente in theory, but this pasta al dente will feel different than thinner pastas al dente due to it's thickness. It's delicious and makes your 4 hour bolognese which was good with spaghetti, GREAT with the proper noodle.

Verpackung, Inhalt, Qualität hervorragend. Richtig zubereitet ein Genuss. Kenne sie nur etwas dicker. Spielt bei der Qualität aber keine Rolle.
