A good solid knife
A good and solid knife that cuts with ease, just enough weight to make cutting easy but not so heavy that your wrist will ache from a morning dressing slate. As stated a good solid knife that I would recommend .

Blade does give in fairly soon. Spend a bit more would be my advice.
