Yes, they will turn back on at the same time that you originally turned them on.

Q: Do you always have to use 3 or can they be used singly

They can be used singly and each can be used at a different burn rate/speed/ brightness.

Q: Do these candles turn them selves on at random?

There are two settings. Move the switch one way for manual operation, or move the switch the other way for the timer. The timer keeps the candle on for six hours then turns it off and back on again, I think 18 hours later. This cycle continues if you leave the switch in that position. You can turn them off manually by moving the switch back to the centre position. You can also use the remote control to turn them on and off.
