This is a Kai original classic carving and fork set which is handcrafted in Japan as part of the SHUN classic series. The Kai knives are constructed from a core of VG-10 stainless steel which is an extremely rust-resistant cobalt alloy with a 61-62 HRC for hardness on the Rockwell scale and can withstand some of the hardest materials on Earth without chipping or breaking. Each Kai blade has been continuously folded and worked until there are 32 layers. It is then specially coated, creating the fabulous lines that are so typical of da steel. The hand-sharpened convex cutting edge ensures the blade remains sharper for longer providing superb cutting performance. The handles are made from laminated black PakkaWood and have that typical Japanese 'chestnut shape' that makes these knives perfectly ergonomic.
